Established in 2023, this network successfully continues the work initiated during Kuopio's European Region of Gastronomy 2020–2021 celebratory years, elevating the region's food identity to its rightful place.

Behind this authentic culinary journey is the "Taste Savo" network, uniting approximately 40 active local producers, restaurateurs, tourism entrepreneurs, and food experts. The network aims to raise North Savo's food culture to its deserved prominence and promote sustainable food production. It strives to support the use of local ingredients and increase the visibility and appreciation of the region's culinary heritage, offering travelers a deeper and more authentic experience.
Savonian Cuisine – Eastern Roots, Deep Flavors, and Community Spirit
At the heart of North Savo's food culture is a profound respect for nature and its bounty. Here, food lives with the seasons: in summer, tables are laden with light salads, fresh berries, and aromatic herbs, while the winter cold is comforted by slow-cooked stews and hearty pies. This continuous change ensures that Savonian cuisine never feels stale – it is always seasonal, always authentic, and always full of stories.
The deep roots of Savonian food stretch back to Eastern Finnish and Slavic traditions. Try it yourself: A North Savo classic at home!
When you visit Finland, be sure to try fried vendace in a restaurant. Pan-fried vendace (muikku) is a classic Finnish dish. It's quick to prepare and heavenly delicious. Serve it with mashed potatoes and tartar sauce, for example.
**Finnish Wild Food:** Wild food – berries, mushrooms, wild herbs and vegetables, as well as fish, game, and reindeer – comes directly from the Arctic Finnish nature.
**Pan-fried Vendace: A Classic Fish Dish**
**Ingredients:**
* Approximately 500 g cleaned vendace (about 600 g uncleaned)
* 1 dl rye flour
* 0.5 dl breadcrumbs
* 1 tsp salt, or to taste
* (white pepper)
* Butter and rapeseed oil for frying
**Instructions:**
1. Mix the dry ingredients together. Roll the vendace in the flour mixture. This is easy to do in a bowl.
2. Heat a knob of butter and a splash of oil in a pan.
3. Fry the vendace in batches until beautifully golden brown, about two minutes per side.
4. Fried vendace is best served immediately after preparation. Serve hot with, for example, mashed potatoes and tartar sauce.
